I think it's a possibility. I mean, being stressed and anxious over something, such as your eating habits, can cause your thoughts to race. Ultimately resulting in not being able to sleep. Also, it is said that if you're on a low carb diet, this can happen. And by me doing a quick google search, it shows that a lot of people are experiencing the same thing but I couldn't get a reason as to why. I suggest, for starts, eating a healthy balanced diet. You're going to feel more balanced physically, and your brain will function more properly. I also suggest doing some 'wind down' exercises to relax the brain before sleeping. This could help.
