Taco and burritos are easy enough to make. Another great thing is taco salad. Try to think of the things you get when you eat out. You might find that you will have to make bulk meals so each person can eat something and just freeze them. Maybe try some pot pies and homemade soups.Fishsticks and salmon are also yummy.
I would check out this thread and just scroll through and read all the things people are having for dinner. It might give you a ton of ideas.
