Hmm, something similar happened to me, or I think it did.
I got so depressed with the fact that the guy I'd prefer most to date didn't like me in that way and had a girlfriend not to mention for reasons I'd rather not discuss we weren't talking, and then I decided to have fun.
So I flirted and two guys got interested in me. I started dating one and after we broke up, I was still kinda in love with the original unavailable guy. Now I'm flirting with another guy that I sorta like, but I feel like I'm still in love with him. So yes, a girl might do that, but I'd never go out with someone if the guy I really liked was single. I don't want to get with others if there's a risk of breaking their heart later.
