I like your idea, but children aren't like little adults. The dose that children are getting is smaller than that of an adult, so they likely had to do clinical trials to make sure they get the dose right. Since their bodies are different they also probably wanted to study it long enough to make sure they don't have side effects. For example, you may have heard of myocarditis with the vaccine, but it was found that the risk of getting it is worse with Covid. Since children's bodies are so different than adults', it's better to be safe than sorry!
