I really enjoyed his Mistborn Series. He does have a ton of books and I would suggest starting out with his original Mistborn Trilogy (The Final Empire, The Well of Ascension and Hero of Ages). Discworld is a series in which different books are about different characters (for example book 1 is about X, book 2 about Y, book 3 about Z, book 4 about X again etc.). Therefore you can either read the books in order of their release, or following the characters.
I recommend reading them in order of their release (first The Colour of Magic, then The Light Fantastic, then Equal Rites etc.).
