How to make red velvet crinkle cookies

I enjoy baking cookies all year long, but I know many people especially like to bake them around the holidays. Red velvet crinkle cookies are versitle and are a fun way to get into the holiday spirit. I bake these around Christmas, Valentine's Day, and throughout the colder months. These can also be turned into bloody eyeballs for Halloween! Know that this recipe is not mine - I use
this one.
To make these cookies, you will need the following:
- 1 box of red velvet cake mix. If you do not like red velvet or are sensitive to the dye, these can also be made with 1 box of chocolate cake mix.
- 2 large eggs
- 6 tablespoons of butter
- 1 teaspoon of lemon zest, or a pinch of crystalized lemon, or a drop of lemon juice
- 1 cup of powdered sugar
- 1 teaspoon of cornstarch
Preheat your oven to 375°F. Combine your powdered sugar and corn starch in a small bowl, and set aside. You won't need this until later.
Put the cake mix, butter (melt in the microwave but let cool before adding), eggs, and lemon zest in a bowl and mix well. Feel fee to use a spoon, cake mixer, or your hands!
Roll the cookie dough into 1 inch balls, then roll in the powdered sugar and cornstarch mix. Put on a baking tray, and bake for 9-11 minutes or until they appear set at the edges. Allow to cool.
Once cool, give them a try! The end result depends on the size of the cookie and the amount of sugar, but they will resemble the cookies above. Store them in an airtight container with wax or parchment paper.
