Chicken breast, portabella mushrooms, and a variety of peppers marinated over night in a garlic alfredo sauce... then sprinkled various cheeses on top, baked, and served with a bit of rice (not pasta cuz I'm trying to keep it "healthy") along with garlic bread.

Had some Sweet Roasted Red Pepper Hummus and Pita Chips (both fresh-made, bought at the arts and crafts show). So yummy!

I'm having what I call, "Orchard Chicken." It's chicken marinated in fruit juice, white wine, and apples. The marinade then becomes a sauce (add cinnamon and apple sauce for added flavor), and the chicken is pan fried with cinnamon and some of the apples from the marinade. Mashed potatoes and stuffing on the side.
It was an experimental meal, but it turned out pretty good!

For those who don't know what it is it's a seafood dish popular in the coastal regions of the Americas, especially Central and South America. The dish is typically made from fresh raw fish marinated in citrus juices such as lemon or lime and spiced with chilli peppers. Chicken with couscous and parmesan. It was supposed to be chicken and polenta but I failed miserably.
