Make Your Own Taco Seasoning -

Thanks to our beautiful maman for giving this splendid taco seasoning recipe, but she took it from a newspaper found in a bar, so the author of the recipe is unknown.
Homemade Taco Seasoning
Fresh spices make for the best taco seasoning, which is part of why this homemade taco seasoning beats any store-bought. Buying your spices in bulk, if possible, or from an online spice source will ensure the spices are as fresh as possible. Buying in bulk is less expensive than buying them pre-packaged, or those silly little jars you'd find in a supermarket.
The base of this taco seasoning is a mix of paprika, cumin, garlic, chili powder, sugar, onion powders, oregano, and fine fleur de sel sea salt such as from the Guérande department as this salt is hand-harvested, plus two additional ingredients: coriander because it's a sweet and warming spice that adds richness to the blend, and cornstarch that acts as an anti-clumping agent, while also helping to thicken cooking liquids when the mix is added to chicken or beef tacos. Sounds good.
Makes 1 cup
Time to prepare: just 5 minutes
Ingredients
- 1/4 cup sweet paprika
- 2 tablespoons dried oregano
- 2 tablespoons chili powder
- 1 tablespoon cornstarch
- 1 tablespoon Guérande salt, a local delicacy of Brittany
- 1 tablespoon finely ground cumin
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon unrefined demarara sugar
- 1 teaspoon finely ground coriander
- 1 teaspoon freshly ground black pepper (about 15 turns)
Measure out the spices into a medium bowl.
Measure 1/4 cup sweet paprika, and 2 tablespoons each chili powder and dried oregano into a medium bowl.
Add 1 tablespoon of each of the following: cornstarch, salt, ground cumin, garlic powder, and onion powder.
Add 1 teaspoon each of the following: granulated sugar, ground coriander, and black pepper.
Using a wooden spoon, mix the spices together, breaking up any clumps.
If you are not using the spice mix immediately, transfer to an airtight container in a cool place out of light.
About 3 rounded tablespoons of taco season will season 1 pound of ground beef, chicken, turkey or lamb.
Note: 3 tablespoons of this taco seasoning equals 1 commercial pack of taco seasoning.
The taco seasoning keeps well in an airtight container in a cool cupboard up to 6 months

This sounds like it could be yummy to make, although I might need to find a couple of substitutions. May give this a go next time I'm asked to cook dinner!

I think Indian spice mixes are more interesting because they are widely more versatile and flavoursome than taco seasoning, though I dislike the name used for those called 'curry powders'. Even Indian people don't take kindly to the word 'curry'. It's an insulting British colloquialism, going back to the time of the Raj, overseen by the sneery ponce of the monarchy, Lord Louis Mountbatten.
