For a start we're going to make Daim cookies. Our Tommy said how much she loves Daim bars so that's what we're going to make this afternoon, but I'd love to make that apple and cinnamon cake as we've got some nice apples today from the market.

It had a nice fudgey texture, but was a bit too sweet for my liking and doesn't use a shot of espresso like Nigel Slater's chocolate espresso cake. Also this sticky chocolate cake doesn't use egg white, so won't sink like his or have a characteristic crispy top.
